The Probe Temperature Sensor is located inside a 0.6″ Stainless Steel cylinder. It is a 10K Thermistor, with an industry standard Type 2 curve. Connected to the end of the Sensor is 2 UL2468 26/2CAWG 105°C Black Wires with tinned ends.
The sensor’s characteristic is NOT linear!

If we measure the voltage over the 10k resistor connected to the Termistor, then the resistance of termistor is:
Rt = R*(Vs/V0 – 1)
Then we have just to convert the measured resistance to temperature with conversion table between temperature and sensor’s resistance, which is shown below. The left column is in Degree centigrade, the right is in OMs. The conversion via the table is needed because the the sensor’s characteristic is NOT linear.
